Delicious & Nutritious Breakfast Idea

As I am gearing up to head out for my group workout with my local Fit Yummy Mummy's, I wanted to share a very simple yet super tasty breakfast idea!

This is a variation to some of the recipes already shared on Club FYM and any way you put this together it is absolutely delicious!

Power Packed Ingredients:

  1. 2 whole eggs
  2. 1/4 cup (2) egg whites
  3. Red pepper
  4. 2 cups packed fresh baby spinach
  5. 2 tbsp flax meal
  6. Fresh blueberries

How  To Make This:

Beat eggs and egg whites together along with 1 tbsp of the flax meal.  Heat up skillet with sunflower oil.  Add red peppers to skillet once hot, allow to sauté for 1-2 minutes on their own.  Add the eggs and then sprinkle the other tbsp of flax meal over top.

Once eggs are almost set, add spinach to the skillet and allow to sauté  another 1-2 minutes or until wilted and tender.

Transfer to a plate and add fresh blueberries on top.   

Enjoy along with your favorite cup of green tea! I personally love Honey Lemon Ginseng by Tetley or Licorice Spice by Stash!!

Variations:

You may chose to use frozen spinach which is just fine!

Also, frozen blueberries are great but should added to the plate first and then topped off with the eggs to allow them to thaw.

Other FYM's have used Greek yogurt to finish off this meal as well!

Here are just a few great shots of the kids admiring a beautiful rainbow overlooking our vegetable garden last week.

With this wet summer we’ve had so far it has made for easy weed pulling but also much less watering on our part of the garden.  Everything is well on it’s way now and we’ve already enjoyed some meals with fresh spinach, peas, green onion, and peppers!

Easy Meal Ideas

Think Eating Clean is too hard or time consuming?

Can't think of any great meal ideas?

Need something new to try?

What I am sharing with you today are two very quick, very easy, and very tasty meals that I enjoy!

For those who are counting calories or wanting to know the breakdown of their meals, I've included that as well.

First, a lunch idea:



Ingredients:

Egg
Green pepper
Baby spinach
Bean sprouts
Tomato
Avocado

Simply cut the green pepper into rings.
Heat a non-stick skillet, you may wipe it with olive oil or even coconut oil if needed.
Once the skillet is hot, place the green pepper down and then crack an egg into it.
Allow the egg to set for a moment.
Add your spinach leaves and bean sprouts around the outside.
Cover to allow the egg to poach.

A few minutes later your egg is poached and your veggies are tender!
Transfer to a plate, add a few slices of tomato and avocado and you're done!
A complete meal with protein, healthy fats and carbs and only one pan to wipe clean!

Here's the breakdown:
1 Egg ~ 74 cal
80gr Green Pepper ~ 22cal
50gr Baby Spinach ~ 11cal
80gr Bean Sprouts ~ 74cal
60gr Roma Tomato ~ 13cal
40gr Avocado ~ 64cal
Total Calories: 257 Carbs: 30gr Protein: 12gr Fat 12gr
If you require more protein you can always add an extra egg.


Here is a simple, fast, loaded with energy, sweet treat perfect for the hot summer months ahead!



Ingredients:

Cottage Cheese
Strawberries
Pineapple
Walnut Pieces

Wash and cut your fruit, I don't even use a cutting board I just cut my fruit right over my bowl!
Measure out your portion of cottage cheese.
Add your fruit and measure out and complete this dish with your walnut pieces.

The breakdown:
1/2 cup Cottage Cheese ~ 100cal
86gr Strawberries ~ 26cal
56gr Pineapple ~ 27cal
25gr Walnut Pieces ~ 175cal
Total Calories: 328 Carbs: 25gr Protein: 18gr Fat: 18gr


This is just a glimpse of how easy Clean Eating can be....and delicious at that!

Yes, I use a digital scale, on occasion, to accurately measure out my ingredients. This is not essential, however, to truly achieve a caloric deficit for fat loss you must be aware of what is going in.

Over flowing measuring cups and eye balling your amounts will only ADD to your calories!

Try to measure your meals for a few days to get a better idea of how much you REALLY are consuming, you'll be thankful you did!

Online menu planners are also a beneficial tool to guide you along as you track your daily calories.

FitDay, SparkPeople and Nutrition for Results are just a few examples.

Three Weeks Post Pregnancy and Already Onboard for the Next Transformation Challenge!













As of today I have officially joined the next Transformation Challenge on CLUB FYM!!

I am SUPER excited for this New Years Transformation Challenge!!

I can't wait to regain my pre-pregnancy body back and more!

I KNOW I can do this as I've already seen results with Fit Yummy Mummy!
These were my results after the first Transformation Challenge in the spring of 2008.

Fit and Yummy During Pregnancy!




















YEAH!!! Since joining the Summer Transformation Challenge for Fit Yummy Mummy in the start of July I have now FINALLY and OFFICIALLY posted my pictures, my stats and my main goals here on my Blog!!

Below for ALL of you to see are my official stats and goals so those of you who have doubts can see that even I an Expecting FYM joined and am committing myself once again to achieving a healthy lifestyle not only for me but for my children as well!!

Current Weight: 155lbs (July'08)
Pre-Pregnancy Weight: 145lbs (April'08)
Size: ?? I am in between maternity clothes and a size 10 right now.
Chest: 38"
Waist: 37.5" (I measured around my belly button)
Hips: 39"
R. Bicep: 11.5"
R. Upper Thigh: 22.5"

The Summer Transformation Challenge will surely be an interesting one this time around for me! I achieved wonderful results during the first TC and am so thankful of the progress I have made since starting FYM in November 2007!!

All of this will only help me in my GOAL to maintain and achieve a HEALTHY and FIT pregnancy!!!

I am 28.5 weeks along (Sept'08) and the most important thing to me right now is:
- My health
- The health of my baby AND
- Staying consistent with my workouts and nutrition plan to the end and beyond!!!

If I can do this, so can YOU!!
I encourage all FYM's and Expecting FYM's to work hard and keep yourself accountable to your health!
