What To Do With Leftovers?

I know for some of you leftovers can either seem like the easiest thing  when it comes to dinner time and then for others who do not prefer leftovers it can be a yucky situation.

In our house, leftovers are a Godsend! 

With a busy family, a busy farm life, and so much going on with our three boys, leftovers are just what this family loves!

There are so many ways to switch up your leftovers as opposed to just reheating them and serving them the way they were the night before, which is absolutely fine as well!

Leftovers can be:

  • Added to casseroles to create a new meal.
  • Made into stews by combing the meat and vegetable portions and adding  seasonings.
  • Compliment or finish off a soup as the flavours of your leftovers have melded and enhanced over night.  (Some meal ideas taste better when left to simmer or marinate over night!)
  • Made into very tasty salads as many vegetable and meat options can be eaten cold and sliced over a bed of fresh lettuce or spinach.

In this video I  wanted to share with you how I used leftovers from a BBQ we had to create a super yummy salad all within 300 calories!

In case you were wondering what was in my salad here it is:

  • 1 cup leafy greens (Oh So fresh straight from the garden)
  • 3 1/4 oz chicken breast (BBQ)
  • 30g cucumber (left from the salad the day before)
  • 64g zucchini (roasted on the BBQ)
  • 30g carrots (steamed out of the garden)
  • 68g beets (sautéed)
  • 46g avocado
  • 2 Tbsp Balsamic Vinaigrette

Total Calories: 278 (without the dressing) 308cal with dressing

Carbohydrates:  24 grams

Protein: 30 grams

Fat: 11 grams

All in all this was quite easy to make, taking little bits of each portion of our leftovers.

The vegetables and the chicken tasted just as good cold on this salad as they would have had I warmed them up and eaten them that way.

A Successful Fit Yummy Mummy Pow Wow!

As the Summer Slim Down Transformation Challenge has wrapped up on Club FYM and the Get Back to Fit Fall Transformation Challenge is now under way what better time then to get our Stratford & Area Fit Yummy Mummy’s together for another POW WOW!!

With the success that Caroline and I both had in the Summer Challenge, both placing in the Top 3, the momentum and enthusiasm amongst our group of FYM’s has been phenomenal!

As each Challenge on Club FYM ends, more and more girls are taking action and joining in!

Eight girls have joined the Fall Transformation Challenge and we are ready to “Step Out Of Our Comfort Zone"  with this one!

For those girls who have not joined or are not members of Club FYM, Jessica and I thought what better way to keep us ALL accountable than to put together a mini challenge amongst ourselves!

Yes, most of  us have no problem getting our Fit Yummy Mummy workouts in each week whether on our own or as a group but it is our nutrition that continues to be a work in progress.

Hence, we came up with the  Lululemon Challenge!

Lululemon, being yoga inspired athletic clothing, that just fits beautifully, looks great and stands up so well, has been a reward option for many of us as we partake in our Transformation Challenges and work on our Fat Loss goals!

This Challenge in nut shell is a 12 week challenge based on a weekly point system.  Jessica and I (with inspiration from Nadina’s past Summer Challenges) have come up with a list of categories in which points may be gained AND/OR points may be taken away!  The entire challenge is based around the Fit Yummy Mummy principles as Holly has outlined in her book.

All the girls received their packages today complete with a Personal Goal Setting sheet for their stats, before pictures and a signed commitment to this challenge.  This package also contains a Workout Log for each week as well as a Nutrition Journal for each day of the week. 

Each participant is expected to submit their points at the end of each week and “the winner” in the end (even though we are ALL winners) will be rewarded!

The BIG BONUS to us ALL is a Lululemon shopping trip at the end of the challenge! We are all saving our pennies each week in hopes to be able to buy ourselves something nice as a reward for all of our hard work!

Girls, I am SO proud of each of you!  Yes, we sweated our booty’s off this morning in our humidity filled sauna like “gym” but how awesome do each of you feel now?  A half an hour of hard work to gain so much energy is HUGE!

Active Children Need Energy Filling Food

What are your children eating for lunch?

Is it nutritious and delicious or delicious and loaded with High Fructose Corn Syrup?

Each and every time I ask my children what they would like for lunch, nine times out of ten they ask for eggs.

It doesn’t matter how they are made, they love them!

Egg Sandwiches

Omelets

Scrambled Eggs

Poached Eggs

Quiche

There are so many ways to cook them and each one is a healthy option.

The favorite egg recipe of choice in our household are Loaded Scrambled Eggs.

We literally stand in front of the fridge and assembly line the ingredients over to the counter. 

The kids pull out peppers, mushrooms, green onion, spinach and meat.  We sometimes add cheese but not always. 

Other great ideas to toss in that are healthy and your children won’t even know they are there are oatmeal (to thicken it up) and chia seeds or flax for a healthy fat option! 

We use whole eggs and add egg whites as well. 

You cannot go wrong with Scrambled eggs and by chopping up all these great veggies and meat and tossing them in, your kids are less likely to complain as it’s all cooked together!

Reid was enjoying his omelet yesterday along with spinach and blueberries. He helped me make his lunch which in turn makes it that much more appealing to him as well! 

Any way you put it it is healthy, it is nutritious and it provides your active children with the nutrients they need to carry on with their day.

Transformation Challenge Winners Announced!

The Summer Slim Down Transformation Challenge on Club FYM is over and the Top 8 Finalists were announced!

Congratulations to Angie, Karen, Nora, Rachel, Sally, Denise, Caroline and……ME!

What a HUGE surprise this was just coming from being chosen a Finalist in the New Years Challenge right before this one!  Very Exciting!!

Well the voting has taken place and the winners have been announced!  Some pretty awesome prizes were up for grabs as well!  One on One Coaching with Holly Rigsby, author of Fit Yummy Mummy, Fit Club memberships and DVD’s, Prograde products and the 1st place winner even received a Flip Cam….very cool!

So here are your Top 3 Winners!

3rd Place ~ Marloes!  YEAH! HOW COOL IS THIS! My First placement in a Challenge since beginning Fit Yummy Mummy in 2007.    I am 100% committed to this lifestyle and I will never go back!

2nd Place ~ Denise!  Denise has been one committed hard working lady since joining Fit Yummy Mummy this year!  She has not waivered or faltered from her goals and has motivated and provided support to all the women on Club FYM on a daily basis!  Congrats Denise!

1st Place ~ Caroline!  I SO super proud of Caroline in coming this far and winning this Challenge!  From just having a baby to now she has accomplished so much and I know she will continue to shine!

As a side note, I would  just like to boast by saying that two girls from Stratford, Ontario (coming from the same high school) have ROCKED this Challenge and I think that is PRETTY DARN COOL! 

A Stratford Fit Yummy Mummy Pow Wow date will be set ASAP in order to recognize this HUGE success!
