What are your children eating for lunch?
Is it nutritious and delicious or delicious and loaded with High Fructose Corn Syrup?
Each and every time I ask my children what they would like for lunch, nine times out of ten they ask for eggs.
It doesn’t matter how they are made, they love them!
Egg Sandwiches
Omelets
Scrambled Eggs
Poached Eggs
Quiche
There are so many ways to cook them and each one is a healthy option.
The favorite egg recipe of choice in our household are Loaded Scrambled Eggs.
We literally stand in front of the fridge and assembly line the ingredients over to the counter.
The kids pull out peppers, mushrooms, green onion, spinach and meat. We sometimes add cheese but not always.
Other great ideas to toss in that are healthy and your children won’t even know they are there are oatmeal (to thicken it up) and chia seeds or flax for a healthy fat option!
We use whole eggs and add egg whites as well.
You cannot go wrong with Scrambled eggs and by chopping up all these great veggies and meat and tossing them in, your kids are less likely to complain as it’s all cooked together!
Reid was enjoying his omelet yesterday along with spinach and blueberries. He helped me make his lunch which in turn makes it that much more appealing to him as well!
Any way you put it it is healthy, it is nutritious and it provides your active children with the nutrients they need to carry on with their day.
I know my children need it! They are very busy boys always full of energy and on the go!
